And I was reminded of my own chicken salad which I think is ultra yummy.


Half eaten bowl of salad.

Ingredients

Sliced chicken - thigh or breast.  Marinaded in whatever marinade I make up (bit of this, bit of that, usually ends up mostly teryaki), then grilled.
Tomato
Boiled/steamed baby potatoes
Boiled egg
English spinach (or lettuce)
Baby beetroot
Mushroom
Yellow capsicum
Cheese

With dressing over the top (I usually use a black pepper, garlic and cheese dressing available from Woolworths).

If you removed the dressing, the egg and the cheese that would be an awesome low fat meal if you used a low fat teriyaki dressing.
Ahem...not that I watch what I eat or anything. <_< Random thoughts ahoy.
