PROBLEM SOLVED!

How do I hold a pony at a certain point underwater until the water freezes - being plastic of course she wants to float.

Problem is she has a solid body and I can't fill her with water.

a bit at a time...meaning, place the item in container, fill with a small amount of water and have some sort of brace for the item, chill, then repeat. layer upon layer of water, braces removed as feet/bottom are set.

Yep, I pretty much thought of that as soon as I'd written the entry! (amazing how that happens eh?)

She's in the freezer now. :)

Tie a weight to the pony? use a stick or something to hold it down while the water freezes, and then pull the stick out and refill it with water? You could also try doing it incrementally--first stand the pony in a bit of water and freeze it, and then float that block on top of more water and freeze it, and put more water on top and freeze it, etc.
