Just made the sauce for the best sketti.
Ingredients
A little olive oil
3 heaped teaspoons crushed garlic (vary to taste, I get carried away with the garlic)
2 teaspoons "squeezy basil" (basil that comes ready chopped in a tube)
half a white onion - chopped
1 small yellow capsicum - chopped
about 7 mushrooms - chopped
half a large zuchinni - chopped
1 medium carrot - grated
1 jar Raguletto Napolitana pasta sauce
half a fast food container of frozen, mushed, homegrown tomatoes
3 generous handfuls of homegrown cherry tomatoes (red and yellow)
1 1/2 cups frozen corn kernels
500g mince
Method
Put a bit of oil in saucepan, add garlic, basil and onion. Fry until onion is clear.
Add mince, fry until mince is browned.
Drain oil off.
Add pasta sauce.
Add all veges, stir.
Let it simmer for a few hours. Stir occaisionally so it doesn't stick to the bottom.
Cook up some pasta (spaghetti is best) and put a few spoonfulls of sauce on the top.
Top with parmesan.
Serve with garlic bread if desired.
